Salted Chocolate & Peanut Slab

A sinfully delicious food gift is always going to be a hit at Christmas time.

Similar to rocky road, these happen to be one of my favouite treats. They’re filled to the brim with an assortment of things I love, and then.. surrounded by chocolate!

The little morsels of deliciousness are wonderful anytime, but I especially love packing them up at Christmas and giving them as gifts.

With no cooking required (only a little melting in the microwave) they’re so easy to make - here’s how I whip them up…

This recipe will fill four mason jars as gifts, or can be stored in an airtight container in the fridge for at least 5 days.

300g Milk Chocolate

125g butter

3 tbsp golden syrup

200g (1½ cups) salted peanuts

2 Crunchie bars, roughly chopped

2 Daim bars, roughly chopped

Break up the milk chocolate into pieces and pop in a microwave proof bowl. Melt your chocolate in the microwave for a minute and a half stirring at 30 second intervals. The chocolate won’t look like it’s doing very much but it’s slowly getting softer. If it hasn’t melted fully after a minute and a half pop back in stirring at 10 second intervals until it’s molten and glossy.

In a second bowl melt the butter for one minute, add the golden syrup to the butter and melt both together for a further 30 seconds.

Using a whisk mix the chocolate, butter and golden syrup together in a large bowl.

Next roughly chop your chocolate bars.

Add your peanuts and chopped chocolate bars to the melted chocolate mixture and mix together using a wooden spoon. After adding the peanuts you can really add anything you like, but as Crunchie and Daim bars are my favourite I add these, and I really think you should too!

The salty coating on the peanuts gets mixed up with the chocolate, honeycomb and hard toffee… The result is a flavour explosion!

Pour the mixture into a 8 x 10 inch casserole dish lined with baking paper. Smooth the top of the mixture as much as you can and place in the fridge.

This will harden after about three hours or over night.

Once set remove baking paper, cut into slices as desired, dust with icing sugar for a festive look and tuck in. Great with a cup of tea, even better with a glass of red wine, and amazing dipped in Baileys Irish Cream!

Alternatively pack them up to be delivered to your nearest and dearest. The mason jars can be purchased in Home Store & More.

And lastly a few suggestions here for the mason jars after the contents have been devoured.

Happy Christmas!

P.s. I know for a fact Santa’s very fond of them too - he’s already worked his way through quite a few!
