White Chocolate & Peanut Blondies

Usually blondies have a sweet vanilla flavour. Here though, we prefer ours with a peanuty crunch and white chocolate chunks. 


Here's the recipe for these deliciously dense, sweet treats... 

What you'll need:


  • 100g butter, softened
  • 150g chunky peanut butter
  • 175g soft light brown sugar
  • 1 egg, whisked
  • 1 tsp vanilla extract
  • 125g plain flour, sieved
  • 1 tsp baking powder
  • 75g white chocolate, chopped into small chunks


  • 8 inch square cake tin lined with grease proof paper


How to make them:

Preheat the oven to 170°C. Butter the inside of the cake tin and line with greaseproof paper.

In a large bowl mix the butter and peanut butter together. Add the sugar, egg and vanilla extract and mix well until all ingredients are combined.

In a separate bowl sift the flour and baking powder together. Add the sifted flour to the mixture and mix together to form a dough - don't over mix or blondies won't be light and crumbly! Finally gently mix in the white chocolate chunks and place the mixture in the prepared cake tin.

Bake for 25 - 30 minutes until golden brown on top and a skewer placed in the centre comes out clean.

Allow to cool and remove to a chopping board before slicing into squares.


Serve as a moorish treat with a cup of tea or coffee, or with a scoop of vanilla ice cream as a dessert.
