What you'll need:
- 2 courgettes, sliced
- 1 onion, sliced
- Olive oil
- 500 ml vegetable stock
- 200g cream cheese
- Salt and pepper
Drizzle the courgette and onion with a little olive oil, season and roast in a casserole dish for 30 minutes at 180°C until soft. This will really intensify the flavour of the vegetables.
Heat the stock in a large pot and add the roasted vegetables.
Pop on the lid and simmer the courgette and onion in the vegetable stock for a further 15 minutes.
Remove soup from the heat and blitz.
Add cream cheese and blitz again.
Serve with a fresh crusty baguette. Luscious, virtuous and so delicious.
