Frozen Peanut Butter Fudge

If you're like me and love peanuts you're going to love this.




Fudge with only a few ingredients and all natural!

What you'll need:
  • ½ cup peanut butter
  • 2 tbsp coconut oil, softened 
  • 2 tbsp maple syrup
  • ¼ tsp vanilla extract
  • ¼ tsp salt
1 Daim bar, chopped (optional)

How to make it:

Make sure the coconut oil is of a mixable consistency. If it isn't pop 2 tablespoons into a cup and melt in the microwave on a defrost setting until it's room temperature and has turned to liquid.

With a spoon combine all the ingredients in a medium sized bowl. 

Pour the mixture into a small lunch box lined with cling film and tap it a couple of times to spread out the fudge. Pop into the freezer for about an hour.

When the fudge has set, place on a chopping board and using a sharp knife carefully cut into squares. Place the fudge in a freezer bag and store in the freezer until ready to eat.
