Watermelon, Cucumber & Feta Salad

If you're heading along to a barbecue and want to bring something to impress, this salad will certainly tick that box! It's so easy to make, tastes delicious and refreshing, and happens to look pretty impressive too. Inspired by 'Watermelon Salad' from The Londoner, here's my version.



Watermelon, Cucumber & Feta Salad (Serves 8)


What you'll need:

  • 1 bag of mixed leaves (I used rocket, spinach and watercress)
  • Small red onion, sliced
  • 1 cucumber, halved, seeds removed and sliced
  • 200g feta, cubed
  • Watermelon, cut into small wedges
  • Coriander
  • Lime 
  • Olive oil


How to make it:

On a plate empty out the bag of mixed leaves. Arrange the slices of onion on top, followed by the sliced cucumber and cubed feta.

Then the watermelon...

An easy way to cut Watermelon: Using a sharp knife carefully cut in half - a serrated knife works best. Cut one half into wedges (I only used half of the watermelon for this recipe). Slice through the flesh on each wedge with a knife without slicing through the rind. Then slowly remove the melon slices with the knife.


When you've sliced all the flesh off half of the watermelon pop the melon pieces on top of the salad.


Once everything is assembled and looking lovely, squeeze over the lime juice and drizzle with olive oil.

Place in the fridge until it's ready to serve; everything will stay fresh, the flavours will blend and once chilled it will taste even more divine.

For the final touch, hold a bunch of coriander over the salad and snip with a scissors until it's sprinkled all over the top.
