Really easy iced coffee

The sunshine's come back! And all of a sudden I've been making these again in place of my usual morning coffee...



I posted a recipe for my all time favourite iced coffee (an iced caramel macchiato) this time last year, but I've found an even easier way to whip one up. The Nespresso version! With a few tweaks to the original recipe you can now make one in under a minute - leaving more time to soak up the sun!



I usually make these with a shot of espresso from a Gaggia coffee machine using ground coffee beans but this recipe swaps that step for Nespresso instead. (Ok, I'll admit it... I have two coffee machines, but who's to say the coffee's not actually addicted to me?!) Also, in my last recipe I used homemade sugar syrup, but here that's replaced with vanilla extract and a teaspoon of sugar.

For a super easy iced coffee here's what you'll need:

  • 1 Nespresso pod
  • 1 tsp of sugar
  • ½ tsp vanilla essence
  • Cold milk
  • Handful of ice
  • Carmel sauce


How to make one:

In a glass, with a shot of your favourite Nespresso (mine's a Ristretto), mix the sugar and vanilla essence into the hot coffee and stir well.



Next pour in the cold milk to about an inch from the top leaving room for the ice.



Lastly, add your ice and a really generous squeeze of caramel sauce on top. I haven't found any that beats this one - yet...


Serve with a straw and enjoy - preferably in the sun!
